Fromage blanc cultures can be used with goat milk or whole cow milk from the grocery store. It produces a creamy, mild cheese. Each packet will be used with 1 gallon of milk and will make approximately 2 pounds of cheese. Fromage blanc culture should be stored in the freezer. Fromage blanc makes a milder cheese than chevre, but takes longer.
To make fromage blanc: - Heat 1gallon of milk to 86ºF - Add 1 packet of fromage blanc culture to your milk - Stir for 2 minutes - Let set for 12 hours - Use cheesecloth to let it drain for 6-12 hours depending upon desired consistency (do not use cheesecloth you purchase at the grocery store - the weave is too big) - Refrigerate up to one week or freeze
