Kids Cooking – Baked Oatmeal

One of our favorite breakfast recipes is baked oatmeal. Its easy- all the kids are capable of cooking it. It can also make a good vegan recipe if you replace the butter and egg with applesauce or olive oil. 

Before Emery started he pulled out the kid friendly recipe,  got out all the ingredients, and washed his hands with goat milk soap (you can see the caramel apple salad in the background):

We always make ours with goat milk.  But since the goats haven’t had their kids yet, we don’t have any milk right now.  Emery decided to use coconut milk as a milk replacement:

Add your (coconut, almond, goat, cow) milk to the bowl:

Add sugar:

We add whole flax seed to ours, but you can use ground flax seed.  This makes a good egg alternative for a vegan version:

Add fresh eggs:

Mix:

Add salt:

And cinnamon:

Lastly, add the oats:

Add the melted butter, and mix well:

Pour it into a 9×13 glass plan and place in a preheated 350 degree oven:

We bake it about half an hour until lightly browned on top, but you can leave it in longer if you prefer:

This is the plain baked oatmeal.  But we usually add things like raisins, craisins, chopped apples, smashed bananas, shredded coconut, nuts, or seeds to ours.  You can “dress it up” however you like!

Preheat the oven to 350 degrees

In a large bowl add,

  • 6 cups oats
  • 1 tsp salt
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • ¼ cup whole flax seeds
  • 1 cup raisins
  • 3 cups water or milk
  • ½ cup honey or sugar
  • 3 eggs
  • craisins (optional)
  • raisins (optional)
  • shredded coconut (optional)
  • chopped apple (optional)
  • smashed banana (optional)
  • nuts (optional)
  • seeds (optional)

In a separate pan melt,

  • ½ cup butter

Pour the melted butter into the large bowl with other ingredients.
Mix well with spoon.
Place in 9×13 greased pan.
Bake for 35 minutes
